Zucchini Lasagna Roll-Ups
Zucchini Lasagna Roll-Ups
Ingredients
- 6 zucchini, large
- 16 oz. ricotta cheese
- 3/4 cup Parmesan, freshly grated (divided)
- 2 eggs, large
- 1/2 teaspoon garlic powder
- Salt (kosher)
- Black pepper, freshly ground
- 1 cup of marinara
- 1 cup mozzarella, shredded
Instructions
Step 1
Start by heating your oven to 400°F so it's nice and hot by the time we're ready to bake. Grab your zucchini and slice them lengthwise into thin strips, about ⅛ inch thick, which will make them easy to roll later. Line a baking sheet with paper towels and lay your zucchini strips out in a single layer. Give them a light sprinkle of salt and let them hang out for about 10 minutes. You'll notice some moisture beads forming on the surface as the salt does its work. Use a few extra paper towels to pat each strip dry, which keeps our lasagna from getting watery in the oven.
Step 2
Grab a small mixing bowl and stir together your ricotta and Parmesan cheese until they are well combined. Now, beat in the eggs and garlic powder, adding a pinch of salt and pepper to taste. Mix everything together with a spoon or whisk for about a minute. You're looking for a smooth, creamy consistency without any large clumps of cheese.
Step 3
Start by pouring a few spoonfuls of marinara into your 9x13-inch baking dish and spreading it evenly to create a savory base. Lay your zucchini slices flat on a clean surface and spread a generous dollop of the ricotta mixture over each one, followed by a drizzle of sauce and a pinch of mozzarella. Carefully roll each slice up into a tight cylinder and nestle them into the dish, side-by-side. Pack them in snugly so they don't flatten out while baking, which helps keep those beautiful rolls intact.
Step 4
Now for the finishing touch! Evenly scatter that last 1/4 cup of Parmesan over the top of your beautiful rolls. Pop the dish into your preheated oven at 375°F. Bake them for about 20 minutes, or until the zucchini feels tender when pierced with a fork and the cheese has melted into a lovely golden crust.

My Tip
Don't skip salting and patting your zucchini strips dry. This simple step draws out excess moisture so your roll-ups stay firm and your marinara sauce doesn't become watery in the oven.
Leftovers
Pop any leftover roll-ups in a glass container to keep the zucchini from getting soggy for up to four days. We recommend reheating them in the oven at 350°F to bring back that lovely golden cheese finish.
Make It Your Own
Try swapping the ricotta for a mixture of crumbled feta and Greek yogurt. This gives your roll-ups a tangy, salty twist that leans even further into those bright Mediterranean flavors.
