Ingredients
- 1/4 cup fresh parsley
- 1/4 cup fresh basil
- 1/4 cup olive oil (extra-virgin)
- 2 teaspoons capers
- 1 tablespoon lemon juice, fresh
- 2 fillets of anchovy
- 1 garlic clove
- Salt (kosher)
- 12 oz. fresh gnocchi (1 package)
- 2 pints of cherry tomatoes
- 2 small red onions, sliced into 2-inch chunks
- 2 tablespoons extra-virgin olive oil
- Black pepper, freshly ground
Instructions
Step 1
Toss your parsley, basil, olive oil, capers, lemon juice, anchovies, and garlic into the food processor. Pulse the mixture for about 30 to 60 seconds until the sauce looks smooth and vibrant green. Taste a small bit and stir in a pinch of salt if you think it needs a little more punch. Transfer the sauce to a jar and pop it in the fridge so it stays nice and cool for your kebabs.
Step 2
First, get your grill ready by preheating it to medium-high for about 3 minutes. While that warms up, pop your wooden skewers into a shallow pan of water for 10 minutes so they don't burn on the grill. Grab a large bowl and toss together your gnocchi, tomatoes, and onions with a splash of oil. Sprinkle in some salt and pepper, stirring until everything is evenly coated and glistening. Now, carefully slide the gnocchi, tomatoes, and onions onto those soaked skewers. Try to alternate the colors to make them look beautiful before they hit the heat.
Step 3
Place your prepared kebabs on a preheated grill or grill pan over medium-high heat. Let them sear undisturbed for about 3 to 4 minutes so you get a nice char. Carefully flip the skewers and cook for another 4 minutes. You're looking for the gnocchi to develop a gorgeous golden-brown crust and the tomatoes to just start blistering and popping.
Step 4
Carefully slide your hot kebabs off the skewers and arrange them on a favorite serving platter. You'll know they're ready when the gnocchi have a lovely golden-brown crust and the tomatoes have just started to soften. Give your salsa verde a quick whisk in its bowl to make sure the herbs and oil are well combined. Drizzle the bright green sauce generously over the warm kebabs right before you bring them to the table.

My Tip
To keep your gnocchi from sliding off the skewers, make sure you pat them dry with a paper towel before tossing them in oil. This helps them grip the skewer better and ensures you get a beautiful, golden brown crust on the grill.
Leftovers
