Ingredients
- 100ml white wine vinegar

- 100g black olives, stones removed
- 100g jarred roasted red peppers, drained
- 1 tablespoon capers, rinsed
- 1 clove of garlic coarsely chopped
- 2 tablespoons chopped flat-leaf parsley
- 3 tablespoons high-quality olive oil
- 1 tablespoon red wine vinegar
- 1 large round loaf of bread (like a muffuletta, soft focaccia, or round cob)
- 2 tablespoons high-quality olive oil
- 125g mortadella
- 125g sweet or mild salami
- 125g cooked prosciutto
- 150g sliced provolone
Instructions
Step 1
To start making your giardiniera, grab a small saucepan and pour in the vinegar along with 100ml of water. Add the sugar and 1½ teaspoons of salt, then stir everything together until well combined. Place the saucepan on medium heat and bring the mixture to a gentle simmer. Keep an eye on it as you let it bubble away for a few minutes, stirring occasionally, until the sugar and salt have fully dissolved. While that’s happening, prepare your vegetables. Chop the carrots, celery, cauliflower, and chili into small, bite-sized pieces, and crush the garlic.
