Ingredients
- 4 medium-sized green tomatoes (approx. 2 lb. total), cut into 1/2" slices
- 2 1/2 tsp. Kosher salt, split
- 3/4 tsp. Ground black pepper, split
- 2 tbsp. Extra-virgin olive oil, split (extra for drizzling and grilling)
- 4 oz. softened goat cheese
- 2 tbsp. heavy cream
- Zest of 1 lemon (roughly 2 tsp.)
- 1/2 tsp. honey or agave
- 1/2 tsp. crushed red pepper, plus extra for topping
- 1/2 cup fresh basil leaves
- Optional flaky sea salt
Instructions
Step 1
Start by laying your tomato slices out in a single layer on a clean baking sheet or cutting board. Sprinkle both sides of each slice evenly with your salt and pepper, making sure you get a little bit of seasoning on every piece. Now, lightly drizzle the oil over the tomatoes. Use your hands or a pastry brush to gently coat them so they don't stick to the grill and get those beautiful charred edges. Let them hang out for a few minutes while you get your grill preheated to medium-high.
Step 2
Grab a medium bowl and combine your goat cheese, cream, lemon zest, and agave. Stir in the red pepper flakes, oil, salt, and pepper, mixing everything together until the sauce is smooth and creamy. Once it's well combined, use a spoon or spatula to spread the mixture across your serving platter. You can swirl it around or smooth it out into a neat circle to create a beautiful base for your grilled tomatoes.
Step 3
Fire up your gas grill to high heat. Once it's hot, give the grates a good scrub and lightly coat them with oil so your tomatoes don't stick. Carefully place your tomato slices on the grill. Let them sear for about 2 to 3 minutes per side. You're looking for a deep, dark char on the edges. Keep an eye on them so they stay firm and hold their shape rather than getting too mushy.
Step 4
Carefully place your tomato slices on top of the goat cheese mixture, pressing them down slightly so they stay put. Give everything a generous drizzle of olive oil to help those edges caramelize. Finish the dish by scattering fresh basil leaves, a pinch of sea salt, and a sprinkle of red pepper flakes over the top. You'll know they're ready when the tomatoes are tender and the cheese is warm and bubbly.

My Tip
Keep a close eye on your tomatoes during those few minutes on the grill. You want those beautiful charred marks, but be careful not to let them get too soft so they hold their shape when you place them on the goat cheese.
Leftovers
Pop any leftover slices into a glass container for up to three days in the fridge. To keep that nice char, we recommend a quick warm-up in the oven or air fryer rather than the microwave.
Make It Your Own
Try swapping the goat cheese for a creamy feta or ricotta to give the topping a different tang. You can also use maple syrup instead of agave for a deeper, autumnal sweetness.
