Steakhouse Salad With Black Pepper Dressing
Ingredients
- 1 1-lb. New York strip steak, 1"–1¼" thick
- Kosher salt
- 1 tsp. freshly ground pepper, plus more
- 4 thick-cut slices bacon (about 6 oz.), cut into ¼"-thick pieces
- 1 garlic clove, finely grated
- 1 cup sour cream
- ½ cup mayonnaise
- 1 Tbsp. Worcestershire sauce
- Juice of 1 lemon
- 8 oz. radicchio and/or frisée (about 1 medium head of either or ½ head of each), torn into 2" pieces
- ½ cup crumbled blue cheese, plus more for serving
- ½ cup thinly sliced chives and/or torn dill, plus more for serving
- Extra-virgin olive oil (for drizzling)
Instructions
Step 1
Season your 1-pound New York strip steak, about 1 to 1¼ inches thick, generously with kosher salt and freshly ground pepper. Set it aside to let those flavors meld.
Step 2
In a large skillet over medium heat, cook the bacon pieces, stirring frequently, until crispy, about 6–8 minutes. Transfer the cooked bacon to paper towels to drain.
Step 3
Return the reserved steak to the pan and cook, turning every couple of minutes, until it’s deeply browned and reaches 125° for medium-rare. Let it rest on a cutting board for 10 minutes.
Step 4
In a medium bowl, mix together the grated garlic, sour cream, mayonnaise, Worcestershire sauce, and ground pepper. Season the dressing with salt and spread it over a platter.
Step 5
In a large bowl, combine the bacon, lemon juice, radicchio or frisée, blue cheese, chives, and a pinch of kosher salt. Drizzle with olive oil and toss everything together before transferring to a platter.
