Ingredients
- Two 15.5-oz. cans of chickpeas, rinsed and drained
- 2 tablespoons vegetable oil
- 1 teaspoon kosher salt (split)
- One 1-oz. packet of ranch seasoning mix
- About 3 cups shredded napa cabbage (roughly 1/4 head)
- 1 medium carrot, grated and peeled
- 3 celery stalks, sliced thin
- 2 tbsp. sliced scallions or chives
- 1/4 cup ranch dressing (extra for serving)
- 2 tbsp. apple cider vinegar
- 6 tablespoons hot sauce
- 2 tbsp. honey
- 2 tbsp. melted unsalted butter
- Four 10-inch tortillas (regular or high-protein), warmed
- 4 tbsp. blue cheese crumbles (optional)

Instructions
Step 1
Grab a large mixing bowl and toss in your drained chickpeas. Drizzle them with oil and stir in the salt until every bean is lightly coated. Now, sprinkle the ranch seasoning over the top and give everything another good toss so the spices stick. Carefully pour the chickpeas into your air-fryer basket. You can keep that bowl on the counter to use for your sauce later. Air-fry at 400°F for about 12 to 15 minutes. Shake the basket halfway through to make sure they get a beautiful, golden-brown crunch all over.
Step 2
Pop your air fryer to 400°F and slide in the seasoned chickpeas. Let them roast for about 15 to 20 minutes total. Give the basket a good shake halfway through so every chickpea gets some love. You're looking for them to get nice and crisp with a lovely golden brown color.

Grab another large bowl and toss in your shredded cabbage, grated carrots, diced celery, and chopped chives. Sprinkle in that last half teaspoon of salt and give everything a good stir to distribute the seasoning. Now, pour in the ranch dressing and vinegar. Toss the vegetables together until every piece is well-coated and the slaw looks bright and creamy.

Grab that small bowl you set aside earlier and whisk together your hot sauce, honey, and melted butter until the mixture is smooth and glossy. Pour in your chickpeas and stir them gently until every single one is fully coated in that spicy-sweet glaze. You'll know you're ready for the next step when the sauce clings evenly to the chickpeas without pooling at the bottom.
Step 5
Now we get to the best part: assembling your wraps! Lay your tortillas flat on a clean surface and scoop an even amount of the buffalo chickpea mixture and the crunchy cabbage onto the center of each one. If you're adding cheese, sprinkle a handful over the top now. To get that classic burrito shape, fold the left and right sides of the tortilla inward toward the middle. Take the edge closest to you and fold it over the filling, then roll the whole thing up tightly toward the top. Keep those sides tucked in as you go so nothing slips out. Once you've rolled them up, use a sharp knife to slice each wrap diagonally right down the middle. You'll see all those colorful layers and the creamy ranch peeking through!
