S'mores Millionaire Bars
Ingredients
- 1/2 cup softened butter (1 stick)
- 3 tablespoons confectioners' sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups flour, all-purpose
- 1/4 cup graham cracker crumbs, plus extra for topping
- 1/4 teaspoon salt (kosher)
- One 11-ounce pack of caramel squares
- 1/4 cup heavy cream
- 1/2 cup butter (1 stick)
- 3/4 cup marshmallow fluff
- 1/4 cup powdered sugar
- A pinch of kosher salt
- 1 cup semi-sweet chocolate chips
- 2 tablespoons butter
- Sea salt flakes for garnish
Instructions
Step 1
Start by getting your oven warmed up to 350°F so it's ready for your bars. While that's heating, grab a 9"x-5" loaf pan and line it with a strip of parchment paper. Make sure you leave a little bit of extra paper hanging over the sides, which gives you a handy "sling" to lift the treats out once they've cooled.
Step 2
Grab a large mixing bowl and use your hand mixer to cream together the butter and powdered sugar. Beat them on medium speed for about two minutes until the mixture looks smooth and fluffy, then stir in your vanilla extract. Next, add the flour, graham cracker crumbs, and salt to the bowl. Mix everything together on low speed just until the crumbs are evenly distributed and no streaks of flour remain.
Step 3
Grab your loaf pan and press that shortbread dough down firmly until it's nice and even. You want a tight layer so the bars hold together once they're sliced. Pop the pan into your preheated oven and bake for about 20 minutes. Keep an eye on the edges; you're looking for a beautiful, light golden brown color. Once it's done, take the pan out and let the crust cool completely. We want it totally chilled before adding the next layer so everything stays set. Look at that golden crust!
Step 4
Grab a small saucepan and set it over medium-low heat. Add your caramels and cream, stirring constantly for about five minutes until everything is smooth and completely melted. Once that gooey caramel is ready, carefully pour it over your cooled shortbread crust. Spread it evenly to the edges so every bite gets a layer of sweetness. Pop the pan into the refrigerator to set while we get the marshmallow layer ready. This quick chill ensures your layers stay distinct and don't bleed together.
Step 5
Grab a large mixing bowl and beat your softened butter together with the marshmallow fluff. Keep mixing on medium-high speed for a few minutes until the texture looks light, airy, and fluffy. Now, stir in your powdered sugar and a pinch of salt. Beat the mixture until it's completely smooth and you don't see any more sugary clumps. Carefully spread this marshmallow cream over your caramel layer, smoothing it out to the edges with a spatula. Pop the pan into the freezer for about 15 minutes to let the layer set firmly before you add the final topping.
Step 6
Grab a medium microwave-safe bowl and toss in your chocolate chips and butter. Heat them at half power in 30-second bursts, giving the mixture a good stir between each round so the chocolate doesn't overheat. Keep going until you have a glossy, smooth melted chocolate mixture. Carefully pour that chocolate over your marshmallow layer and spread it into an even sheet. While the chocolate is still wet, sprinkle your graham crumbs and a pinch of flaky sea salt across the top. Pop the pan in the fridge for about 30 minutes until the chocolate is firm and set.
Step 7
Now that your bars have chilled and set firmly, it's time to get them ready for the table. Use a sharp knife dipped in hot water to slice the slab into 2-inch wide strips for clean, professional-looking edges. Store any leftover treats in an airtight container in the fridge to keep that gooey marshmallow layer from softening too much. These stay delicious and snappy for up to a week when kept chilled!

My Tip
Make sure your shortbread crust is completely cool before adding the caramel layer. If the base is still warm, the caramel might soak in too much, and we want those distinct, gooey layers!
Leftovers
Keep your bars in an airtight container in the fridge for up to five days to maintain that fudgy texture. To get that gooey s'mores feel again, pop a square in the microwave for 10 seconds before serving.
Make It Your Own
Try swapping the all-purpose flour for a 1:1 gluten-free flour blend to make these treats accessible for everyone. You can also use a gluten-free graham cracker to keep that classic s'mores crunch.
