Refreshing Watermelon Som Tam | Easy Thai-Style Salad

Watermelon Som Tam

Watermelon Som Tam

Total: 10 minutes | Serves: 4 servings
Bright, juicy cubes of watermelon glistening in a zesty, salty dressing make this Watermelon Som Tam an absolute showstopper on a summer table. You get that immediate hit of fresh lime and pungent fish sauce, balanced by the sweetness of the fruit and a subtle kick from sliced serrano chiles. It's the kind of side dish that looks like a work of art with its vibrant reds and pops of green from fresh mint and cilantro. We're taking a cue from the classic Thai green papaya salad but swapping the shreds for ripe watermelon. The contrast between the crunchy roasted peanuts and the tender fruit creates a texture that keeps you coming back for another bite. Since there is no heat involved, you can whip up this Watermelon Som Tam in minutes. The magic happens when the brown sugar and salt meld with the lime juice, creating a dressing that transforms the melon into something savory and sophisticated. It's a refreshing way to use up your summer produce while bringing a bold, Southeast Asian-inspired profile to your next backyard barbecue. Grab your favorite platter and get ready to toss these juicy pieces together.

Watermelon Som Tam

Ingredients

  • 3 limes (large), cut in half
  • 1 serrano pepper, sliced thinly
  • 3 tablespoons light brown sugar
  • 2 Tbsp. roasted salted peanuts (extra chopped for garnish)
  • ½ tsp. Diamond Crystal kosher salt (or ¼ tsp. Morton)
  • 2 lbs. watermelon, peeled and cut into random 2"–3" chunks
  • 3 Tbsp. fish sauce
  • Cilantro and/or mint leaves with tender stems for garnish

Instructions

Step 1

Start by slicing three large limes in half and squeezing all that bright juice into a small bowl. Set the juice aside for later, but keep those squeezed lime halves. Toss the lime shells into a large resealable plastic bag along with your thinly sliced serrano chile, light brown sugar, salted roasted peanuts, and kosher salt. Squeeze the air out and seal the bag tightly. Grab a rolling pin and gently smash the contents of the bag. You want to keep rolling and pressing until the chiles and peanuts are coarsely crushed, but not completely pulverized.

Step 2

Grab your large resealable bag and pour in that reserved lime juice. Toss in your 2 pounds of cubed watermelon and the fish sauce, making sure the fruit pieces are roughly 2 to 3 inches so they hold up well. Squeeze the air out of the bag and seal it tight. Give everything a good shake for about 30 seconds until the watermelon is evenly coated in the dressing and looks glossy.

Step 3

Gently tip your dressed watermelon into a large, shallow serving bowl, making sure you pour in every last drop of those delicious juices. Now we can make it look beautiful. Scatter a handful of fresh mint and cilantro leaves—keep those tender stems for extra flavor—across the top. Finish it off with a generous sprinkle of your chopped salted roasted peanuts for a salty, satisfying crunch.

My Tip

Be careful not to over-shake the bag once you add the watermelon. We want the fruit to be coated in that salty-sweet dressing without breaking down too much, so a few gentle tosses will keep those irregular pieces juicy and intact.

Leftovers

Keep any leftovers in a sealed glass container in the fridge for up to two days. Since this is a fresh salad, we don't reheat it—just give it a quick stir and add a few fresh peanuts for a little extra crunch!

Make It Your Own

If you want to make this vegan, swap the fish sauce for a mixture of soy sauce and a pinch of seaweed powder. You'll keep that savory, salty depth while making the salad plant-based.
