Tequila Sunrise Pops
Ingredients
- 2 cups pineapple juice
- 1/2 cup tequila
- 1/4 cup lime juice
- 1/4 cup grenadine
- 2 limes, cut into 1/4" slices
Instructions
Step 1
Grab a small rimmed baking sheet and line up nine 3-oz. dixie cups so they stay steady while you work. In a large liquid measuring cup, whisk your pineapple juice, tequila, and lime juice together until the mixture is smooth and well combined. Carefully pour the blend into each cup, filling them about three-quarters of the way to the top. To get that beautiful sunrise effect, stir in about one teaspoon of grenadine per mold, letting it swirl naturally through the juice.
Step 2
Grab your paring knife and carefully cut a small slit into the center of each lime slice. Slide a wooden spoon or popsicle stick through the opening until it's secure. Gently set the lime slice on top of your filled cup. Press down slightly to make sure there's no gap between the lime and the mixture, which helps the pop freeze into one solid piece.
Step 3
Pop your filled molds into the freezer and let them chill for about 4 hours. You'll know they're ready when the popsicles feel firm to the touch and no longer wiggle. If you're in a rush, just give them a quick poke with your finger to make sure they're completely solid before pulling them out.
Step 4
Grab your favorite pair of kitchen shears and carefully snip a vertical line down the side of each Dixie cup. Gently peel the paper away from the frozen treat, working your way around the edge until the pop slides right out. You'll know they're ready to enjoy when you see those vibrant, sunset layers staring back at you!

My Tip
To get those beautiful swirls of color, gently stir the grenadine with your popsicle stick instead of leaving it as a drop. This creates a stunning sunset effect throughout the pineapple mixture before you freeze them.
Leftovers
Keep these pops in a freezer-safe container for up to two weeks so they don't pick up other freezer smells. Since these are frozen treats, there's no reheating needed—just let them sit at room temperature for a few minutes to soften before enjoying!
Make It Your Own
Try swapping the tequila for coconut rum to give these pops a tropical, creamy vibe. It pairs beautifully with the pineapple juice for a treat that tastes like a vacation on a stick.
