Ingredients
- 2kg of apples, diced small (peeling and coring not required)
- 250ml of apple juice, water, or cider
- juice from 2 lemons
- 3 sticks of cinnamon
- 1 piece of star anise
- a thumb-sized portion of ginger, coarsely chopped
- a few whole cloves
- 250g of white granulated sugar
- 250g soft light brown sugar
Instructions
Step 1
Grab your favorite large pot and add the apples, cider, lemon juice, cinnamon sticks, star anise, ginger, and cloves. Pour in 750ml of water and set the heat to medium. Once the mixture reaches a gentle simmer, let it bubble away for about 30 minutes. You'll know it's ready when the apples are tender enough to mash easily and your liquid has reduced by about half.
Step 2
First, fish out those whole cinnamon sticks, star anise, ginger, and cloves so they don't get blended in. Set up a sieve over a large heatproof bowl or right back over your pan and pour in the apple mixture. Use the back of a sturdy spoon or a potato masher to press the softened apples through the mesh. You want to push through all that luscious pulp until only the tough skins and cores are left in the sieve, then simply toss those leftovers away. If you used a separate bowl, pour the smooth puree and juices back into your pan. Stir in your sugars and salt over medium-low heat for about 3 to 5 minutes, stirring constantly until the sugar completely dissolves and the butter looks glossy. If you used apple juice instead of water, taste a small bit first; you might want to cut back on the sugar to keep the flavor balanced.
Step 3
Set your burner to low and let the mixture simmer gently. You'll want to stay close for about 2 hours and 30 minutes, giving it a frequent stir so nothing sticks to the bottom. Keep a close eye on the pot, as the butter can occasionally spit hot bubbles. We're looking for the mixture to deepen into a rich, dark brown and thicken up until it has a glossy, jam-like consistency. Once it reaches that beautiful texture, carefully spoon the butter into your sterilized jars and seal them tight. Keep your jars in the fridge, where they'll stay fresh for up to two weeks.

To get that gorgeous, deep mahogany color, make sure you stir the mixture frequently during the final two hours. This prevents the sugars from scorching on the bottom of the pan and ensures your apple butter stays smooth and creamy.
