Ingredients
- 1 lb uncooked gnocchi from the store
- Corn kernels from 4 shucked ears (or 3 cups of thawed frozen corn)
- 2 cups cherry tomatoes
- 1/4 cup unsalted butter, cubed
- 2 garlic cloves
- Salt (kosher)
- Crushed red pepper flakes
- 3/4 cup dry white wine (e.g., Sauvignon Blanc)
- 1/4 cup fresh basil, finely chopped
- Parmesan cheese, grated for garnish
- Black pepper, freshly ground

Step 1
Fire up your grill to medium-high heat, aiming for about 400°F to 450°F. While that warms up, tear off four 12-inch pieces of heavy-duty aluminum foil. You'll want these ready to go so you can get your gnocchi on the heat as soon as the grill is sizzling.

Lay out your sheets of foil and portion out the gnocchi, corn, and tomatoes so each packet has an even amount. Place a pat of butter and a bit of minced garlic on top of the vegetables. Sprinkle each pile with a quarter teaspoon of salt and a pinch of red pepper flakes for a little kick. Finish everything off with a generous drizzle of white wine to keep the gnocchi tender.
