- 3 cloves of garlic, minced ($0.27)
- 2 Tbsp finely chopped red onion (24g, $0.27)
- 2 Tbsp julienned fresh basil (4g, $0.45)
- 2 Tbsp olive oil, split (1 oz., $0.35)
- 1 Tbsp balsamic vinegar (refer to notes, $0.23)
- ½ tsp sugar, granulated ($0.01)
- 1¼ tsp salt, divided ($0.10)
- ¾ tsp freshly cracked black pepper, divided ($0.06)
- 1 lb. boneless, skinless chicken breasts (2 breasts halved, $2.57*)
- 1 tsp powder garlic ($0.03)
- ½ tsp seasoning, Italian ($0.02)
- ½ cup shredded mozzarella (60g, $0.47**)
- 1 Tbsp balsamic glaze for garnish (refer to notes, $0.22)
Instructions
Step 1
First, we'll get our workspace ready so everything goes smoothly. Finely dice your tomatoes and mince the garlic, then toss them together in a small bowl with fresh basil and a splash of olive oil. While those flavors mingle, pat your chicken breasts dry with a paper towel and season them generously with salt and pepper. Having everything chopped and measured now means you can focus on getting that chicken seared to a beautiful golden brown.
Step 2
Grab a medium bowl and toss together your diced tomatoes, minced garlic, red onion, and fresh basil. You'll want to stir in the olive oil, balsamic vinegar, sugar, salt, and pepper until everything is evenly coated. Let the mixture sit at room temperature for about 15 to 20 minutes while you prep the chicken. This gives the flavors a chance to meld together and lets the tomatoes release their natural juices for a delicious topping.
Step 3
Carefully slice your chicken breasts in half horizontally to create thinner cutlets, which helps them cook evenly and quickly. Pat each piece dry with a paper towel so the seasoning sticks and you get a beautiful sear. Sprinkle both sides of the meat with the remaining salt, black pepper, garlic powder, and Italian seasoning. Rub the spices in gently with your fingers to make sure every inch is well-coated before they hit the pan.
Step 4
Now we're ready for the stove! Heat that last tablespoon of olive oil in your large skillet over medium-high heat until it shimmers. Carefully place your chicken breasts in the pan and let them sear for about 3 to 5 minutes on each side. You're looking for a beautiful, golden-brown crust on both sides. Keep cooking until the chicken is juicy and cooked through. Check that the internal temperature has hit 165°F with your meat thermometer so you know it's safe and delicious.
Step 5
Turn your burner down to low so we don't overcook the meat. Gently sprinkle about 2 tablespoons of shredded mozzarella over each chicken breast, spreading it to the edges. Pop a lid on your skillet or cover the pan tightly with a piece of aluminum foil. Let it simmer for about 2 to 4 minutes until the cheese is gooey and completely melted. Once that cheese looks bubbly and delicious, you're ready to plate these beauties.
Step 6
Now that your chicken is cooked through and juicy, it's time for the best part. Carefully spoon a generous heap of the fresh tomato mixture onto each breast, spreading it right to the edges. Pop the pan back under the broiler for about 2 to 3 minutes. You're looking for the cheese to get bubbly and just slightly browned. Once you pull them out, finish everything off with a slow, artistic drizzle of balsamic glaze. Serve these up while they're hot and enjoy that beautiful contrast of sweet and savory!

My Tip
To keep your chicken from getting soggy, wait until the breasts are fully cooked and resting before spooning the tomato mixture on top. This ensures the juices from the balsamic vinegar and tomatoes don't steam the meat and ruin that beautiful golden crust.
Leftovers
Keep your chicken in a sealed glass container for up to three days. To keep the chicken juicy and the tomato topping fresh, we recommend reheating it in the oven at 350°F until warmed through.
Make It Your Own
Swap the chicken breasts for thick slices of fresh mozzarella cheese to make this a vegetarian delight. Just sear the cheese quickly in a pan before topping it with that fresh tomato mixture.
