- 2 teaspoons of smoked sweet paprika
- 2 teaspoons of ground cumin
- 1 tablespoon of chipotle chili paste
- 2 tablespoons of tomato purée
- 400-gram can of chopped tomatoes
- 540-gram jar of black beans
- 2 tablespoons of red wine vinegar
- 1 tablespoon of light brown sugar
- 500 grams of Strong Roots Sweet Potato Fries
- 60 grams of feta cheese
- 50 grams of pickled red onions
- 1 avocado, peeled, halved, pitted, and diced (optional)
- 15 grams of coriander, roughly chopped
- 1 lime, cut into wedges
Instructions
Step 1
Start by pouring a generous splash of olive oil into a large saucepan or a flameproof casserole dish and place it over medium heat. While the oil warms up, chop one large onion, a couple of bell peppers, and a few cloves of garlic — feel free to mix and match your pepper colors for some extra vibrancy. Once the oil is shimmering, add the chopped onions and peppers to the pan, along with the minced garlic and a big pinch of salt. Stir everything together and let it cook for about 10 to 12 minutes, stirring often. You’re looking for the vegetables to soften and take on a lovely golden hue around the edges. The aroma of the garlic and peppers will fill your kitchen, making it hard to resist sneaking a taste!
Step 2
Now it’s time to layer in some incredible flavors. In your pan, add the smoked paprika, cumin, and chipotle chili paste. Stir these spices for about 1 minute over medium heat, letting them toast just until they become aromatic and deepen in color. Next, add the tomato purée and continue to cook for an additional 1-2 minutes, stirring occasionally to prevent sticking. Once the mixture is bubbling and fragrant, it’s time to bring in the tomatoes. Pour in the chopped tomatoes, and don’t forget to swill out the can with a little water—about half a can should do. This will help you capture every last bit of flavor. Stir in the black beans, making sure they’re well combined with the tomato mixture. Let everything simmer together for a few minutes, until it thickens slightly and the colors become vibrant. You’re well on your way to a delicious chili!
Step 3
Once your mixture is bubbling away, turn down the heat to a gentle simmer. This will help deepen those rich flavors without burning anything. Next, pour in the red wine vinegar and sprinkle in the sugar, then give it a good stir to blend everything together. Allow the chili to simmer uncovered for about 35 minutes, stirring occasionally. You'll know it's ready when the sauce has thickened and reduced, clinging nicely to the beans and veggies, and the aroma fills your kitchen. Enjoy the wonderful transformation happening right before your eyes!
Step 4
With about 20 minutes left on the clock for your chili, it’s time to get those Strong Roots Sweet Potato Fries cooking. Preheat your oven according to the instructions on the package—usually around 425°F (220°C) works well. Spread the fries in a single layer on a baking sheet lined with parchment paper, making sure they’re not crowded, so they get that lovely crispy texture. Bake for about 20-25 minutes, flipping them halfway through, until they’re golden brown and delightfully crispy. You’ll know they’re ready when they’re fragrant and have that perfect crunch!
Step 5
Once your sweet potato fries are perfectly crispy and golden brown, transfer them onto a large platter or a big plate, creating a nice, inviting base. Next, take your spoon or ladle and generously spoon the warm black bean chili over the fries, letting it cascade down and cover them just right. Now, it’s time to add a little creaminess! Crumble the feta cheese over the top, allowing its salty goodness to mingle with the chili. If you’re using avocado, slice it up and dot those beautiful green pieces around the dish for added freshness and color. Finally, sprinkle a handful of fresh coriander over everything for a burst of flavor and garnish. Don’t forget to serve some lime wedges on the side; a squeeze of lime will elevate all those flavors to perfection!

My Tip
To really enhance the flavor of your black bean chili, make sure to sauté the onions, peppers, garlic, and chili until they’re softened and lightly golden. This caramelization brings out their natural sweetness and adds depth to the dish, setting a delicious foundation for the spices to shine.
Leftovers
To store your delicious black bean chili fries, transfer them to an airtight container and refrigerate for up to three days. When you're ready to enjoy them again, reheat in the oven at 350°F (175°C) for about 15-20 minutes to keep that crispy texture intact.
Make It Your Own
For a tasty twist, swap the feta for crumbled queso fresco, which adds a milder, creamier texture that pairs beautifully with the spicy black bean chili. You could also use lime zest for an extra citrus kick!
