Ingredients
- 2 tablespoons of olive oil
- 2 red onions, diced finely
- 2 jarred roasted red peppers, chopped finely
- 3 cloves of garlic, minced
- 1 red chili, diced finely
- 2 teaspoons of smoked sweet paprika
- 2 teaspoons of ground cumin
- 1 tablespoon of chipotle chili paste
- 2 tablespoons of tomato paste
- 400-gram can of diced tomatoes
- 540-gram jar of black beans
- 2 tablespoons of red wine vinegar
- 1 tablespoon of light brown sugar
- 500 grams of Strong Roots Sweet Potato Fries
- 60 grams of feta cheese
- 50 grams of pickled red onions
- 1 avocado, peeled, halved, pitted, and cubed (optional)
- 15 grams of coriander, roughly chopped
- 1 lime, cut into wedges
Instructions
Step 1
In a large saucepan or casserole dish, warm olive oil over medium heat. Add chopped onions, peppers, garlic, and chili, seasoning with salt, and cook for 10-12 minutes until softened and slightly golden.
Step 2
Stir in the paprika, cumin, chipotle paste, and tomato purée, cooking for 2-3 minutes. Then add the chopped tomatoes, rinsing the can with water, followed by the black beans.
Step 3
Once boiling, lower the heat and add the red wine vinegar and sugar. Simmer uncovered for 35 minutes until the mixture thickens.
Step 4
With 20 minutes left on the chili, cook the Strong Roots Sweet Potato Fries according to the package instructions.
Step 5
Layer the crispy sweet potato fries on a platter, then top with the chili, crumbled feta, pickled onions, and avocado if you’re using it. Finish with a sprinkle of coriander and serve with lime wedges.
