Whether you're a seasoned oyster lover or just discovering the joy of grilled oysters, this recipe is a great place to start, and with the addition of some hot sauce and lemon, you'll have a flavor combination that's sure to become a new favorite.

Grilled Oysters

Ingredients

  • A quarter cup of kimchi with excess liquid removed
  • One half stick or four tablespoons of softened butter
  • Twenty-four oysters of medium to large size
  • A pinch of kosher salt
  • Fresh cilantro chopped into small pieces, hot sauce, and wedges of lemon, for serving

Instructions

Step 1

To start, you'll want to get your kimchi ready. Take out your mini food processor and add the kimchi - we're aiming for a finely chopped texture, so process it until it's nice and smooth. If you don't have a mini food processor, don't worry, you can also use a knife to finely chop the kimchi. Once it's chopped, add in your butter and continue processing until the two are well combined, stopping to scrape down the sides of the processor as needed, until you get a uniform mixture.

Step 2

Now it's time to get your oysters ready for the grill. You'll want to preheat your grill to medium-high heat, which is usually around 400-450°F. Once your grill is hot, carefully arrange your oysters on the grates with their flat sides facing up - this will help them cook evenly and prevent them from tipping over. As you close the lid, you'll start to see them slightly open up after about 5-7 minutes, which is your cue that they're almost ready.

Step 3

Now it's time to get up close and personal with your oysters. You'll want to carefully transfer them to a cutting board, where you can steady each one with a pair of tongs or a dishtowel. Hold the oyster firmly in place with one hand, and with the other, use an oyster knife to gently pry the lid off - be patient, it might take a little shimmying to get it to release. Next, you'll use your knife to cut the muscle that attaches the oyster to the flat side of the shell, and then loosen the meat from the bottom of the shell. Now it's time to add some flavor: sprinkle a tiny pinch of salt over each oyster, followed by about half a teaspoon of that delicious Kimchi butter. As you continue to grill your oysters for about another minute, keep an eye on them to make sure you don't spill any of that precious liquid - you want it all to stay inside the shell where it can infuse the oyster with flavor. You'll know they're done when the butter has melted and the oysters are heated through, which should take just about a minute, maybe a bit longer depending on the heat of your grill.

Step 4

Now it's time to get your gorgeous grilled oysters ready to serve. You'll want to carefully transfer them from the grill to a platter, taking care not to spill any of that delicious juice. As you arrange them, sprinkle some fresh cilantro on top - the bright green color will add a pop of freshness to your dish. Finally, serve your oysters with a side of hot sauce and a few lemon wedges, so you can squeeze a bit of citrus over the top and add an extra kick of heat if you like.

My Tip

When grilling oysters, make sure to not overfill with kimchi butter, as this can cause the liquid to spill over. This will help you achieve a perfectly balanced flavor.

Leftovers

To keep your grilled oysters fresh, store them in a covered glass container to preserve the crispy topping. Reheat in the oven at 350°F for a few minutes to restore the golden crust.

Make It Your Own
