Green Eggs and Ham Frittata
Green Eggs and Ham Frittata
Ingredients
- 1 bunch of chives (approximately 1½ oz.), separated
- 8 large eggs
- ¾ cup of heavy whipping cream
- 1 teaspoon of freshly cracked pepper
- ½ teaspoon of Diamond Crystal or ¼ teaspoon of Morton kosher salt
- 2 oz. of finely grated Parmesan cheese (around 1 cup), plus additional for serving
- 2 tablespoons of vegetable oil
- 4 oz. of uncured boneless ham, minced
- 2 cloves of garlic, minced
Instructions
Step 1
To start your Green Eggs and Ham Frittata, position an oven rack in the center and preheat your oven to 350°F. While that’s warming up, take a bunch of chives and finely chop 6 of them, setting them aside for later use as a fresh garnish. Next, toss the remaining chives into a blender. Add in 8 large eggs and blend on high until the chives are mostly purĆ©ed, giving the mixture a lovely green color. You want it to look vibrant and smooth, so blend for just a minute or so. Now, pour in ¾ cup of heavy cream along with 1 teaspoon of freshly ground pepper and ½ teaspoon of either Diamond Crystal or ¼ teaspoon of Morton kosher salt. Finally, add in 2 ounces of finely grated Parmesan cheese, which is about a cup. Blend everything together for another 5 to 10 seconds, just until combined—don’t worry about it getting frothy; we’re aiming for a creamy consistency here. This mixture is the heart of your frittata, so let’s make it just right!
Step 2
To start, grab a 10-inch ovenproof nonstick skillet and place it over medium heat. Pour in 2 tablespoons of vegetable oil and let it warm up for a minute. While the oil heats, finely chop 4 ounces of uncured boneless ham. Once the oil is shimmering, add the ham to the skillet and stir it often, cooking for about 2 minutes until it starts to brown and crisp up nicely. Next, finely chop 2 garlic cloves and add them to the pan. Stir everything together for about 15 seconds, just until the garlic becomes fragrant—this will really elevate the flavors! Now, it's time to pour in your egg mixture. Use a heatproof rubber spatula to gently stir the eggs, incorporating the ham and scraping the edges of the skillet. Keep this up until you see the sides begin to bubble, which should take around 30 seconds. You're well on your way to a delicious frittata!
Step 3
After you’ve cooked your frittata mixture on the stovetop, it’s time to transfer it to the oven. Carefully slide the pan into the preheated oven and set the timer for 13 to 15 minutes. You’ll know it’s done when the frittata is firm all the way through; give the pan a gentle shake, and if it doesn’t jiggle, you’re in business! Once it’s set, use an oven mitt to take the pan out of the oven. Run a spatula around the edges of the frittata to loosen it from the sides, making it easier to serve later. Let it cool for about 5 minutes on the counter, and then sprinkle with some extra Parmesan and your reserved chives for that final touch of flavor. Look at that beautiful golden crust!

My Tip
For a beautifully green frittata, make sure to blend the chives with the eggs until they're mostly purƩed. This not only infuses the mixture with vibrant color but also ensures that the chive flavor is evenly distributed throughout the dish.
Leftovers
To store your Green Eggs and Ham Frittata, place it in a glass or ceramic dish, covering it tightly with plastic wrap to maintain moisture. It’ll stay fresh in the fridge for up to 3 days. When you’re ready to enjoy it again, reheat individual slices in the oven at 350°F for about 10-15 minutes to keep that lovely texture intact.
Make It Your Own
For a delightful twist, swap the uncured boneless ham for sautƩed mushrooms, and add a handful of fresh spinach for a vibrant vegetarian version. This will give your frittata a lovely earthy flavor and a pop of color!
