Ingredients
- 1 cup of rice vinegar
- 1/4 cup of granulated sugar
- 2 tablespoons of salt
- A 5-inch square piece of kombu
- 2/3 cup of soy sauce
- 1/3 cup of sake
- 1/4 cup of granulated sugar
- 2 cloves of garlic
- 3 cups of Carolina Gold rice
- 6 large eggs
- 1 1/2 pounds of smoked pork jowl bacon, diced into small pieces
- Two 8-ounce carrots, finely julienned
- 8 ounces of daikon radish, finely julienned
- 1 cup of kimchi (adjust quantity based on preferred spice level)
- 1/3 cup of crispy fried garlic
- 4 scallions, sliced thinly
Instructions
Step 1
In a small pot, mix together rice vinegar, sugar, salt, and kombu. Heat gently until the sugar dissolves, then remove from heat.
Step 2
Simmer the mixture, then remove it from the heat. Let it steep for at least 1 hour before using.
Step 3
Blend the soy sauce, sake, sugar, and garlic until smooth, then set aside for later use.
Step 4
Rinse the rice until the water is clear, then drain. Boil 3 cups of water, add the rice, cover, and simmer on low for 20 minutes. Let it rest for 5 minutes, then mix in sushi su and air-dry in the fridge uncovered for 1 to 2 days.
Step 5
