Ingredients
- 1 (15.5-ounce) can of chickpeas, rinsed and dried
- 2 tablespoons of extra-virgin olive oil
- Coarse salt
- 3 ounces of finely grated Parmesan cheese (approximately 1 1/2 cups)
Instructions
Step 1
Preheat your oven to 375° and position a rack in the center. On a baking sheet, combine the chickpeas with oil and sprinkle with salt.
Step 2
Roast the chickpeas in a preheated oven until they’re lightly golden and dry, about 12 minutes.
Step 3
Take the baking sheet out of the oven and gently press the chickpeas together. Evenly sprinkle cheese over the top of the chickpeas.

Bake until the cheese melts and is lightly golden, about 10 to 15 minutes. Then, transfer the chips to a wire rack to cool slightly.
Step 5
Tear the cheesy chickpeas into bite-sized pieces with your hands, creating chip-like shapes.
