Savory Chickpea Cheese Chips Recipe

Chickpea Cheese Chips

Chickpea Cheese Chips

When I’m in the middle of a hectic week, I often find myself reaching for quick snacks to keep my energy up, and that's where these Chickpea Cheese Chips come in. I whipped them up one Wednesday evening while trying to multitask between work emails and dinner prep. To my surprise, it only took me five minutes to get them ready, and using a can of Goya chickpeas made the process a breeze. I was a little skeptical about how well they would turn out with just chickpeas and Parmesan, but wow, the combination worked like a charm! I used some freshly grated Parm, which added a lovely depth of flavor. I did have a small hiccup when I realized I had only a scant amount of olive oil left in my bottle—thankfully, I was able to stretch it with a splash of water to help crisp them up in the oven. The best part? My kids devoured them! They were all too eager to help me sprinkle the kosher salt, and we ended up with a perfect, crunchy snack that disappeared in no time. Now, I can’t wait to share how you can make these delightful Chickpea Cheese Chips yourself!

Ingredients

  • 1 (15.5-ounce) can of chickpeas, rinsed and dried
  • 2 tablespoons of extra-virgin olive oil
  • Coarse salt
  • 3 ounces of finely grated Parmesan cheese (approximately 1 1/2 cups)

Instructions

Step 1

Preheat your oven to 375° and position a rack in the center. On a baking sheet, combine the chickpeas with oil and sprinkle with salt.

Step 2

Roast the chickpeas in a preheated oven until they’re lightly golden and dry, about 12 minutes.

Step 3

Take the baking sheet out of the oven and gently press the chickpeas together. Evenly sprinkle cheese over the top of the chickpeas.

Step 4

Bake until the cheese melts and is lightly golden, about 10 to 15 minutes. Then, transfer the chips to a wire rack to cool slightly.

Step 5

Tear the cheesy chickpeas into bite-sized pieces with your hands, creating chip-like shapes.

My Tip

For perfectly crispy Chickpea Cheese Chips, make sure to pat the chickpeas dry thoroughly after draining them. This step helps remove excess moisture, allowing them to roast beautifully and achieve that satisfying crunch we all love.

Leftovers

To keep your Chickpea Cheese Chips crispy, store them in a single layer in an airtight container lined with paper towels to absorb moisture. They’ll stay fresh in the fridge for about 3 days. When you're ready to enjoy them again, pop them in the oven at 350°F for about 5-7 minutes to revive that delightful crunch!

Make It Your Own

For a delicious twist, try swapping the Parmesan for nutritional yeast to keep it dairy-free while still achieving that cheesy flavor. You can also sprinkle in some smoked paprika for an extra kick!

What I'd Do Differently

As I savored these chickpea cheese chips, I couldn’t help but think about adding a sprinkle of smoked paprika next time for that extra kick. The crunch and cheesy goodness were such a hit with my family; I can already see this becoming a go-to snack during movie nights. Can’t wait to experiment and make them even better!
